Crustless Butternut & Sage Quiche

Undecided on a quick and easy dinner? Why not try this simple Crustless butternut and sage quiche.


It only takes a few minutes prep and leaves plenty time for you to do those things you would rather be doing… like making lunches for school, bathing the kids or finishing that novel!

1 butternut, peeled and chopped into 2cm cubes
1 onion, peeled and sliced
1/2 head of  garlic sliced across the circumference
4 eggs
splash of milk
olive oil

Heat the over to 200. Pop the butternut and onion in a baking tray, drizzle with olive oil and place the garlic on top of the butternut. Season to taste and pop in the over for about 40 minutes or until the butternut is tender and just beginning to brown.
When the garlic is about 10 minutes away from being ready add the sage to crisp.

Remove from the oven and place in a pie dish. Beat the eggs with a splash of milk and pour over the butternut mix. Sprinkle crumbled feta over the top of the dish and return t the oven and bake for about 30 minutes or until the butternut begins to brown.

Serve with a delicious green salad. Buon appetit!

p.s. I was terribly excited to use sage and lettuce from my garden.
